"Healthed Up" - Super Simple Corn Pudding

This may be the easiest thing I’ve ever made. My husband loves corn pudding. LOVES it. However, we’ve found that all of the traditional recipes out there either call for 800 ingredients or are loaded with unnecessary fat. (A stick of butter and lots of sour cream or eggs) Maybe our taste buds are warped at this point (I prefer the word “trained’ 😉 ), but we enjoy our version just as much. Only 4 ingredients and still creamy, satisfying and way more friendly in the “macro department”.



Here's what you’ll need-


  • 1 box jiffy corn bread mix (gluten free brands will work too)

  • 1 can creamed style corn

  • 1 can whole kernel sweet corn- drained

  • ¾ cup plain Greek yogurt

  • Baking dish of choice- I use a 2 quart round one or my 7 x 11 Pyrex dish


Directions-


  1. Preheat over to 350 degrees and spray dish with cooking spray

  2. Place all ingredients in the dish and mix well. (You can mix in a separate bowl, but why dirty the extra dishes?!)

  3. Bake in oven for 50 minutes to 1 hour or until lightly golden brown on top and cooked through the middle.




See? Easy as 1-2-3! Literally 😊



Tips-

  • You could add an egg if you wanted, but we enjoy it just as well without.

  • Depending on the deepness of your dish you may have to adjust your baking time.

  • Enjoy as a holiday side dish or any time of year!
